I found here at Bali, herritage sambal named "Sambal Matah", wow.. it's delicious too. Good post to elevate Indonesia dishes.

Sambal terasi is my favorite one originallyy from Java, inspite of “Sambal Kecap/Sweet Soy Sauce”. When eating at restaurants I always had meals prepared without terasi and found the food to be delicious until an Indonesian friend teased me so much about my "phobia" that I tried some of her food and was shocked to find that it didn't taste remotely "fishy", but rather salty and sooooo much more delicious - in short, I am now a convert and wouldn't dream of leaving it out of a recipe. This recipe for sambal terasi is a particularly good one and it is a regular on our dinner table!!!

As a foreigner living in Indonesia, I initially found terasi too pungent for my taste.
